Crunchy Munchy Granola

Work and school will soon return, so will our routines, schedules and to-do’s. We have created a really yummy go-to for one less to-do, like breakfast and a healthy snack all in one. This granola is perfectly vegan, since we’re still in Veganuary and has all the needed ingredients to keep energy levels up and hunger at bay.

Ingredients

Keep it simple:

•½ cup B-WELL Canola oil

•½ cup Maple syrup or honey

•3cups rolled oats

•1cup popped rice

•½ cup walnuts, roasted

•2 tbsp linseed

•2 tsp vanilla extract

•½ tsp fine sea salt

•2 tsp ground cinnamon

•3 Tbsp almond/peanut butter

•2 tsp raw cacao powder, (optional for chocolate flavour)

For added greatness!:

•½ cupgoji berries

•2 tbsp pumpkin seeds

•½ cup chopped dates

•½ cup coconut shavings

•½ cup cashews, roasted

•¼ cup slivered almonds, roasted

•¼ cup sunflower seeds, roasted

•Thick yoghurt/ chia pudding, honey and fresh fruit, to serve

How To Make:

1.Preheat the oven to 160°C and line a large oven tray with baking paper.

2.In a medium bowl, combine the dry ingredients (except any fruit bits like dates, goji berries ,etc) and mix together. In another bowl, mix the B-well Pure Canola oil, maple syrup, almond butter and vanilla extract. Then add the wet mixture into the dry, making sure to coat everything evenly.

3.Transfer the mixture onto the large oven tray and spread around, but maintaining a cluster, pressing down in the middle to create those delicious clumps.

4.Bake for 15 minutes, rotate the pan halfway, and use a fork to gently break the granola apart slightly. Bake for 15 minutes more, or until golden brown. Add the fruit bits now if desired.

5.Remove and allow to cool. Toss with remaining extra ingredients and store in an airtight jar. Will keep crunchy and fresh for at least 2 weeks.

6.Serve with yoghurt or Chia pudding, honey and fresh fruit, and/or milk if desired.
